He's really sinking his teeth into single life.
Just months out of jail, "Cannibal Cop" Gilberto Valle is seeking a gal who suits his taste — in an online dating profile that lists "cooking" as a favorite hobby.
The Match.com profile proclaims that Valle — who was found guilty of plotting to cook and eat his now-ex-wife, a conviction a judge later tossed — is seeking "non-judgmental" woman who's "a little kinky ;)."
Under the handle "AmicableOne14," the 30-year-old, disgraced former NYPD officer notes he's a big foodie looking for a woman age 24 to 32 who likes cooking, dining out and wine tasting. Of his ideal date, he writes: "You appreciate the simple things and can make the best out of a situation that is less than ideal," perhaps alluding to the fact that he's under "supervised release" and has a curfew.
"You're non-judgmental. You can generally see the good in people and you are kind and generous . . . You appreciate and laugh at bad jokes," he writes. "If this is you, let's get a cup of coffee."
Valle notes he's divorced with a child but fails to point out his wife fled out of fear of being an entree.
The hungry-for-love bachelor does list several qualities about himself in order to lure the perfect woman to eat . . . dinner with.
"I have a few bucket list items: a cross-country drive along with other traveling, seeing Jerry Seinfeld do stand-up, going to a live Hell's Kitchen dinner service," he proclaims.
And, he adds, he has great taste in food and beverages. "I drink an abnormal amount of coffee, sometimes I just like it black. My favorite chain coffee is Dunkin' Donuts, but at home I drink Cafe Bustelo."
He adds he recently got a new job, enjoys to play basketball and sometimes just relaxes at home.
"Occasionally I just need a day indoors by myself and that usually entails enjoying a glass of bourbon on the rocks," he writes.
Valle wanted no part in discussing his romantic pursuits on Tuesday. "A what? A dating profile? No, I'm sorry. I don't know anything about it," he told The Post.
When shown a screenshot of the profile, he blurted, "I don't want to see it, thanks," and hurried inside his home.
Valle, who was released from jail in July, is under a "supervised release" schedule in which he must make curfew. Valle was freed on $100,000 bond after a surprise ruling that tossed his conviction for scheming to kidnap, kill, cook and eat his then-wife and other women — because a judge claimed it was all fantasy.
Valle admitted to engaging in depraved online interactions but claimed he never intended to carry out the grisly plots.
His latest online efforts are much more tame. The profile includes photos of his dog, Valle wearing a turtleneck shirt and grinning and him holding a baby.
He also brags that "I know more about baseball than all of your guy friends" and "I'm also seriously good at tweeting."
The disgraced ex-cop admits he may be an acquired taste.
"I am spending my energy rebounding from the errors I made in my past and rebuilding my life. Things are progressing very well on that front, and I am just beginning a new career," he writes.
